How to choose the best saucepan?
Advantages and defects of the most common materials
Stainless steel has now become the king of pots; it can easily wash it in the dishwasher, and if equipped with a triple layer on the bottom of the pan, it also allows particularly long cooking. It has low thermal conduction and does not spread heat evenly. Aluminum is an excellent thermal conductor.
It does not fear rust and is quite durable over time. Although it tends to react with some specific foods, it does not have a particularly high price in general.
Copper is now in disuse, especially in domestic kitchens, because it requires complicated maintenance. As a result, only the great chefs continue to use copper pots, which is also a costly material.
The cast-iron pots heat up very slowly but are excellent for cooking at high temperatures. As for grilled meats, they fear rust and must be treated with grease.
The latest generation non-stick cookware (different and more expensive than Teflon) contains stone particles that give greater resistance to the surface, both in terms of heat and durability: the food slips. It does not stick, or they burn.
However, these pans are unsuitable for all types of preparation required by cuisine and should be washed, preferably by hand, because they could crack in the dishwasher.
Features based on the hob
I will use the saucepan you are about to buy on your hob. Then carefully evaluate the materials since you will have to orient yourself accordingly for the pots based on the top type. While almost all go perfectly with the classic gas fires, the electric or induction ones require specially studied materials (magnetic stainless steel).
Some basic tips
Determining the best cookware brand is difficult, but some tips can help you. First, choose a saucepan with metal handles or heat-resistant silicone: you can go from the stove to the oven in no time.
In addition, you will avoid dirtying two different pots. Next, use the transparent glass lids: you will observe the cooking progress inside the pot without uncovering it and preventing the food from burning.
It is advisable to choose the size of your new saucepan according to your real needs. In essence, for an extended family or for those who often host many people at dinner, a pot of at least 9 inches in diameter will be an excellent choice; for couples or singles who do not like to try too particular preparations, 7 inches one will be more than enough and will require less time to cook the food inside.
